3 cups vegetable broth (warm)
1 tsp salt (or to taste)
½ tsp black pepper
½ tsp dried thyme (or 1 tsp fresh)
¼ cup nutritional yeast (for cheesy umami goodness)
2 tbsp coconut cream (optional, for extra creaminess)
Fresh parsley & lemon zest for garnish
Instructions:
Sauté the aromatics: Set the Instant Pot to Sauté mode. Add olive oil or plant-based butter, then toss in the diced onion. Sauté for 2-3 minutes until translucent. Add the garlic and mushrooms, cooking until fragrant and slightly softened.
Toast the rice: Stir in the arborio rice and let it toast for about 1 minute—this helps build a rich, nutty flavor. Pour in the wine (or extra broth) to deglaze the pot, scraping up any flavorful bits from the bottom.
Pressure cook: Add the vegetable broth, salt, pepper, and thyme. Close the lid, set the valve to Sealing, and cook on High Pressure for 6 minutes. Once done, do a quick release (careful of the steam!).
Make it creamy: Stir in the nutritional yeast and coconut cream (if using). Let it sit for 1-2 minutes to thicken up. Adjust seasoning as needed.
