Ingredients:


For the Cauliflower Steaks:


  • 1 large head of cauliflower (sliced into 1-inch thick steaks)

  • 2 tbsp olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp crushed red pepper flakes (or more if you like it extra spicy!)

  • Sea salt and freshly ground black pepper to taste


For the Spicy Dijon Hummus Sauce:


  • 1 cup plain hummus

  • 1 tbsp Dijon mustard

  • 1 tbsp lemon juice

  • 1 tsp hot sauce (adjust for desired spice level)

  • 1 clove garlic (minced)

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • Pinch of sea salt


Instructions:


For the Cauliflower Steaks:


  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. Carefully slice the cauliflower into steaks (about 1-inch thick). Don’t worry if some florets break off—roast them anyway!

  3. Brush both sides of the cauliflower with olive oil.

  4. In a small bowl, mix the paprika, cumin, garlic powder, red pepper flakes, salt, and pepper. Sprinkle evenly on both sides of the steaks.

  5. Roast in the oven for 25-30 minutes, flipping halfway through, until golden brown and tender.


For the Spicy Dijon Hummus Sauce:


  1. In a bowl, whisk together hummus, Dijon mustard, lemon juice, hot sauce, minced garlic, olive oil, smoked paprika, and sea salt until smooth and creamy.

  2. Adjust seasoning or spice level as needed.


Serving Suggestion:


Plate your roasted cauliflower steaks and either drizzle generously with the spicy Dijon hummus sauce, or pair as a dip. Garnish with fresh parsley, a sprinkle of red pepper flakes, and an extra squeeze of lemon for that zing.
